Cilantro Pesto

I love love love pesto. And spicy food but that’s nothing new. So when I came across a recipe for cilantro pesto, I knew I had to try it.

You’ll need:
Cilantro
Basil
Garlic
(all chopped)

Olive oil
Kosher salt
Parmesan
Your favorite noodle, I had macaroni so macaroni it was!

In a food processor combine cilantro, basil, salt, garlic and olive oil.

Add grated Parmesan and begin to blend.

Add more olive oil as needed to continue blending.

Get your noodles ready!

Add the cilantro pesto!

Mix it up and top with extra grated Parmesan!

  1. So I’ve heard that miso paste can be a great supplement to pesto if you want to make it a little less calorically dense.

    There’s a purely oil-free recipe here but I think I’m going to try half and half. Love pesto! The more of it I can put on stuff, the better!
